Asian Inspired Pickled Garlic

This is my first pickling effort. These pickled garlic turned out so fantastic we just wanted to eat them like olives. The garlics get mellow with the boiling, but still carry a wonderful flavor. Be patient and let them marinate a while.
- Prep: 25 mins
- Cook: 10 mins
- Yields: 3 Cups
6 Little Bird's Eye Peppers can use dried Bird's Eye Chilies if desired
2 Tbs. Coriander Seed
1 Tbs. Brown Mustard Seed
1 Tbs. Yellow Mustard Seed
2 tsp Turmeric
2 tsp. Dried Minced Ginger
1In a medium sauce pan bring pickling spice & vinegar to boil 5 minutes.
2Add Garlic and hot peppers and boil another 5 minutes.
3Pour into sterile mason type jars. They should seal as they cool.
4Store in the fridge for at least 3 weeks.
