Blackberry Tapioca Pudding

My grandma Dorothy introduced her grandkids to the wonders of blackberry picking and the best blackberry pudding imaginable. She of course used white sugar back in the day. Nevertheless, this pudding was normally eaten when it was cool enough not to burn our lips. The hint of cardamom and use of agave nectar brings it to a higher level.

  • Yields: 4 Servings or 2 Hearty Servings or 1 Super Indulgent Serving


2-1/4 Cup Fresh Blackberries

2 Small Fresh Peaches Skinned and chopped or 1 Normal Peach

3 Tbs. Tapioca

1 Tbs. Agave Nectar

1/4 tsp. Ground Cardamom


1Put all ingredients in a microwave proof bowl and stir.

2Microwave on high for 3 minutes. Stir.

3Microwave on high for 1 minute. Stir. - Repeat this step 3 times. It should become like a thick soup.

4Rest for 15 minutes or until cool.

5Serve with whip cream.
