My brother, Carter Romero and his friend Randy Rambo recently filmed this epic tortilla making session in Carter's home in Hawaii. Watch and enjoy and smell the fresh toasted corn smell.
See the video HERE .
- Prep: 10 mins
- Cook: 15 mins
- Yields: varies
1Heat cast iron flat skillet on low.
2Put 1 forkful of masa per tortilla that you want into a mixing bowl.
3Add enough water where it is no trouble. That means where it is a little sticky but not so much to stick to the plastic on the tortilla press.
4Get out your tortilla press and put enough plastic wrap to cover both sides as shown in video.
5Roll a ball of masa so it is twice the size or so of a golf ball and put it slightly off center toward the hinge of the press, then press it flat.
6Let gravity drop it off the plastic wrap into your hand and then deftly smack it on to the hot griddle so it doesn't stick to your hand.
7Cover with a lid and let steam. You can cook them all the way this way, or you can give them a little toast on open fire.
8If it sticks use a spatula, not tongs to scoop up or you'll tear it.
Serve with butter, beans, or.... good carnitas meat and cheese.
