Greek Lemon Rice Pudding

I used to cook rice just to have hot rice for this. Now I cook rice in my instant and have rice just waiting for my imagination throughout the week. Since the rice is already made this makes an easy and healthy breakfast.

1/2 tsp Cinnamon
1Get a Medium size sauce pan.
2Grate the lemon zest and squeeze the lemon for some fresh juice.
3Beat eggs and then mix in the lemon zest and juice, brown sugar and salt
4Turn heat 1/4 cup of water on medium low heat and slowly warm the pre-cooked rice.
6When rice is heated pour in the egg mixture and keep stirring while the eggs cook in the hot rice.
7The mixture will thicken when the eggs are cooked.
8Sprinkle in the Cinnamon.
