Mini Apple Pies

These little mini pies make a lovely lazy morning breakfast. Full of spiced apples and the crust is remarkable silky, yet flaky. The almonds add a crunchy dimension to the soft apples.

  • Yields: 11 or so mini pies

Ingredients

Filling

4 Apples peeled cored, thin sliced and cut in 1" pieces.

2 tbsp Brown Sugar

1 tbsp Flour

2 tsp Everything Nice (Pumpkin Spice - Spice of Life Blend)

2 tsp lemon juice

1/2 cup chopped Almonds

Butter

Crust

1 scant Cup Flour (Plus more for rolling out the dough)

2 tbs Powdered Sugar

1/4 lbs. Butter (stick)

2 tbs Wheat Germ {optional}

1 Pinch salt

1/4 tsp Allspice

3 tbsp Water

Directions

Filling:

1Have your peeled apples ready in a bowl and sprinkle with the lemon juice and toss.

2In a measuring cup mix the dry ingredients together and then toss together with the apples. Set aside.

Crust:

1Soften butter slightly.

2Mix dry ingredients in a bowl and add butter. Mix by hand until it is like little pebbles. Slowly add water until you can form a ball, but not too sticky.

Preheat oven @ 375º

Form Crust

1Form dough into 2" size balls

2Roll out each ball to an approximate circle

3Lay dough into lightly oiled muffin cups.

Spoon in filling

1Sprinkle on Almonds, top with slivers of butter

2Bake at 375º for 25 Minutes

3Cool Slightly and ease them out of the muffin form with a large spoon or heat safe flat flexible spatula

I used a silicon muffin pan. It was a little tricky lining the pan with the dough and I'd recommend refrigerating the dough overnight, but not necessary if you're prepared to mend the crust a bit.
