Spice Pastry Cream

This is a Spice of Life Organics spin off of a classic pastry cream. However I always crave more flavor. The Cardamom and Nutmeg add that memorable pizzazz. This makes enough to fill 1 dozen small cream puffs or 6 huge ones that weigh more than a .... well you fill in the blank. At any rate you get 1 cup of Pastry Cream.


1 Cup Milk

2 pinches Cardamon

2 gratings fresh Nutmeg

1/4 cup sugar

3 Tbs flour

1/4 tsp Salt

4 Egg Yolks

1 tsp Vanilla Extract

2 Tbs Butter

OPTIONAL for Chocolate Cream Puffs

3 Tbs Cocoa Powder


1Heat Milk in a heavy bottomed sauce pan until hot, but not boiling.

2Add Cardamon and Nutmeg so it infuses ... The milk.

3Combine flour, salt and sugar in a separate bowl. Mix.

4When the milk is hot shake in dry mix while stirring with a whisk briskly. No LUMPS! Lower heat.

5Keep shaking in dry mix and whisk like crazy.

6Separate eggs. Put yolks in a cup and whisk. Until a yellow goo. Discard the eggs whites or plan for the next baking time tomorrow.

7Lower heat

8Drizzle in the egg yolk goo to the thickening milk. Stir vigorously - No LUMPS! - Turn off heat

9Oh yeah add that nice butter, mmmm butter

10Keep stirring until mixed and you have no more ingredients to add

11Cool slightly then add to your favorite pastry cream container.

12Puff pastry or Cream Puffs
