One cold weekend when trying to decide dinner, I came up with this recipe. Something about that hit of Texas Trouble made this a real comfort food that warmed the belly. Served here with nibbles of serrano and corn tortillas with cheese.

  • Prep: 20 mins
  • Cook: 25 mins
  • Yields: 2 Serious Large Servings

1 tsp. Olive Oil

1/3 Cup Polish Sausage (cut 1/4 in. thick then quartered)

3 Garlic Cloves Minced

1/4 Large Onion Sliced

1/2 Cup Sliced Cabbage

1 Can Diced Stewed Tomatoes - Not Drained

1/2 Can Pre-Cooked Black Beans - Drained

1/2 Can Pre-Cooked Corn - Drained

1 to 2 tsp. Texas Trouble

1 tsp. Better than Boullion (Vegetable or whatever stock you want)

1/2 Can Tap Water

1Heat 1 tsp. Olive Oil in the soup pan.

2Add sliced Polish Sausage and fry til slightly browned.

3Add Garlic and Onion cook till translucent.

4Add Cabbage and cook till limp.

5Dump in Stewed Tomatoes, Black Beans and Corn

6Measure Texas Trouble. If you are sensitive to spicy foods, used only 1 tsp of Texas Trouble.

8Mix the Boullion in the half can of Water and pour in.

9Return to boil and turn off and serve.

Heat corn tortillas on a cast iron skillet to get that little toasty marks on them.
